This wine is a classic benchmark of the variety and its homeland. A vibrant aromatic cocktail of sea-breeze freshness and citrus fruits with honeyed undertones. Bonedry, brightly acidic with a textural mineral smokiness and a food-begging finish. A Greek wine cultivated in the special volcano territory of Santorini. Imagine the explotion of aromas in your nose and your palate!
Vine parcels at Pyrgos Village and Imerovigli at an altitude up to 400 meters above sea level.
Age of vines: 20-60 years
Planting density: 2,000-2,300 plants per hectare
Yield per hectare: 3,000 Kg
Harvest: handpicked grapes starting from 25 July.
Classic white vinification. Destemming, skin contact for 6 hours in low temperature 5-6 °C. Gentle pneumatic press. Fermentation temperature at 16-17 °C. Conservation in stainless steel tanks. Stabilization, filtering and bottling.
